墨西哥Taco+Mexican Hash馅

晚餐搞定。

这次薯条我没用炸的,而是用烤箱烤的, 要不我们家LG 除了发胖,还是发胖. 但是就没有炸得好吃.

改吃中餐吧,不会涨肉的。

馅料

1 lb lean beef, chopped coarse
1 med. onion,chopped fine
2 large fresh tomatoes,peel,chop
1 clove garlic, crushed
2 tbsp vinegar
1 tsp sugar
1 tsp ground cinnamon
1 pinch cloves
1/4 tsp cumin, ground
1 tsp salt
1/2 cup seedless raisins
1/2 cup almonds, blanched, slivered
Brown meat over med. heat. After meat begins to cook and some he fat begins to cook out, add the onion. Cook until onion is translucent. Drain off excess fat, if any.
Add all remaining ingreds. except almonds. Simmer for abt. 30 min.
Add the almonds just before serving; use as garnish for top of dish.

Tortilla的做法

我做的是面粉的墨西哥饼。要是玉米的,就会比较黄
Tortilla Recipe
1) Flour Tortillas
3 cups of white all purpose flour
1/2 tsp of salt
1 tsp baking powder
1/2cup of lard or vegtable shortening
1 cup of hot water
Mix the flour and salt. Mix in the lard by hand until the mixture resembles small peas. Add the water slowly until you have a soft elastic ball. You may need to add a little more or less water, but do it slowly. You may not really need as much water as you think you do. Knead until smooth. Cover with a damp towel and then let rest 15 minutes.
Make about 7-9 equal size balls. Flatten and roll each ball into a flat round disk. Cook on a very hot cast iron skillet. No oil is necessary. Flip when bottom side is golden, the top should be bubbling slightly when ready. Use a spatula to lift the edge and check for doneness before flipping completely. Keep the cooked tortillas warm by covering with a damp towel while you continue to cook.
2) Wheat Tortillas
To make wheat tortillas, use the above flour tortilla recipe and substitute wheat flour for 1/4 to 2/3 of the white flour. Wheat flour is a little tougher, so the amount used is based on your personal taste. You may substitute, all the white flour if you wish but use less than called for.  
3) Corn Tortillas
Unlike flour tortillas, corn Tortillas usually do not contain any added oil. They can be made with corn flour, but the traditional recipe uses something called masa harina or masa flour.

Tortilla 墨西哥玉米饼

1 tsp baking powder 烤粉
1/2cup of lard or vegetable shortening 食用猪油,或是植物起酥油。真要没有,用黄油也成。

Add the water slowly until you have a soft elastic ball.  慢慢分几次加进热水,把面团揉搓到表面匀滑,有弹性。如果太干的话,加少量水。但是不要一次加入。一勺一勺的加。
You may not really need as much water as you think you do. Knead until smooth. Cover with a damp towel and then let rest 15 minutes. 耐心点地揉搓到平滑,别迫不及待的就往里加水。盖上湿布,等15分钟。

小麦饼。。。如果用小麦来做,那么出品就会比较硬,所以你可以用全部小麦代替all-purpose 面粉, 也可以用1/4到2/3的量。这完全看个人的喜好。

这第3种就是用做墨西哥饼特有的面粉--masa harini来做。当然也可以用普通的玉米粉,和做面粉饼不太一样的是,这个玉米饼完全不掺油。加水就成。

我觉得从口味上比较能接受用面粉做的。

忘了解释什么是 Masa Harina

把玉米心在氧化钙中煲煮,洗净后捣碎成粉状,混入足够份量的水并拌匀,便制成生面团。柔软滑溜的粉团可做软皮,较硬的粉团可做玉米饼,而Masa Harina是工厂制造的粉末状面团。
